wintertime tonics

hello ~ and welcome fall! loving all the beautiful colors we are having, and the rain too.  i want to share a few new things that i have been up to lately ~ vinegar tonics.  i've been wildcrafting all kinds of loveliness, and soaking them in apple cider vinegar.  the result is a vitamin + mineral rich vinegar, with all the healing benefits of the herbs used.  i don't have any pictures of the dandelion vinegar ~ that was the first one i made, and i didn't know it would turn into such a wonderful thing. i used the flowers only, but any part of the dandelion can be made into a tonic or vinegar. all of a sudden i see goldenrod everywhere ~ such a beautiful plant it must have blessings to share with us....

goldenrod tonic will improve mineral balance ~ help prevent kidney stones ~ eliminate gas ~ and improve immune functioning.  all this wonderful growing right outside your door ~ local people a ton grows at riverside park.  collect the top third half of the plant, chop coarsely, place in a jar, cover with apple cider vinegar, then add a breathable cloth to the top + secure with a rubber band, and place in a sunny window for six weeks. if you are feeling extra witchy, strain off on a full moon. you are making powerful nourishment for yourself and your family.

meet burdock ~ a fabulous weed that loves your liver.  yes indeed a liver tonic, make it a part of your day.  i went out digging the root ~ burdock is easy to identify ~ look for its distinctive spiny, burr like heads.  burdock is a biennial plant ~ the best time to harvest the root is during the fall of the first year  ~ or in the spring of the second year.  clean and chop roots ~ place in a jar ~ pour apple cider vinegar over it ~ cover with a breathable cloth and place in a sunny window....you can make salad dressing with this ~ and even eat the pieces of burdock root as well

then as fall continues, and the first frosts appear, its time to pick the rosehips.  down by the river i went, and collected a lot.  a few words on rosehip vinegar, i pulled the stems and ends off, sliced in half, and put in a food processor.  i gave them just one or two pulses, to dislodge several seeds.  and a few seeds in the vinegar will be fine ~ its mainly the hairs inside the rosehips that would be irritating to the throat.  so be sure and strain this liquid through a cloth or coffee filter, to collect all those fine hairs ~ before consuming.  you can use these vinegars in place of any vinegar, in a salad dressing recipe.  but i pretty much follow

1/2 cup oil (olive or avocado)
1/2 cup infused vinegar
2 tablespoons mustard
fresh herbs
fresh garlic
fresh parmesan
salt + pepper

all of these vinegars will work wonderfully in this recipe.  please please please don't ever use vegetable or canola oils ~ the are no bueno. pretty much straight up shit food.  i think our time has come to an end, so go out and harvest some of these green blessing.  i am dacia and you can follow me on instagram or facebook. feel free to stop by my website simplyjosephine.com to see the latest lovely by way of aprons....i wish you all much success in your wildcrafting endeavours, namaste and all that.
